Tallaght Hospital Canteen

This project involved the reinstatement of a commercial kitchen and dining hall in the Adelaide and Meath and National Children’s Hospital, Tallaght, following extensive fire damage. The work included reroofing the building, the completion of walls, ceilings, services, the installation of all kitchen equipment and decoration throughout. The dining area involved the installation of new servery counters and a coffee shop, the complete refurbishment of the dining hall and the installation of all furniture. The kitchen installation phase was completed in 5 months, and the entire project was completed in 8 months.

The kitchen phase of this project involved completing all demolition work, building blockwork walls and re roofing the building. New services were installed including mechanical, electrical and a new ventilated ceiling. Extensive services co-ordination was required as the new ceiling level was raised by 200mm, a large volume of services had to be installed and a new ventilated ceiling was fitted. The services installed included air supply and extract, single and 3 phase power, IT, fire alarm, aspiration system, hot and cold water supply, supply and return heating, gas and refrigerant supplies.  In the production areas, a white rock finish was applied to the walls, and epoxy and vinyl flooring was laid. New and existing kitchen equipment was fitted including 9 cold rooms, 3 blast chillers, ovens, hobs, chefs counters, brat pans and fryers.

The dining hall reconfiguration involved maintaining the existing exposed steel roof structure, repairing damaged areas, installing new steel in sections and reroofing the entire building. Co-ordination of services was required to connect new services to existing and conceal services within the ceiling void prior to the installation of a finished plank ceiling. New finishes were completed including ceramic and vinyl flooring, painting and plexwood timber cladding. All servery equipment was installed including hot and cold counters, condiments and beverage counters. Finally new loose furniture was installed.
